1- 4oz Tilapia Fillet
2 TBSP Ranch Dressing
Dash of Paprika or Ground Cayenne Pepper
1/2 Red Bell Pepper, sliced
1 small onion, finely sliced
1/2 c. fresh Broccoli Florets
1. Preheat oven or grill to 450*
2. Spray a 12” piece of Heavy Duty foil with non-stick cooking spray. Place fillet on foil & spread the Ranch Dressing over fish. Sprinkle with a dash or Paprika or Ground Cayenne Pepper.
3. Arrange Broccoli, peppers and onions over fillet. Fold & Seal all the edges.
4. Place foil in middle of oven, directly on rack or on outside grill with lid closed. Cook about 25 minutes.
Check fillets. It should be white & flaky. If not cook 5 minutes longer.
Our Notes: You really need to seal it well or the juices leak out and then the fish sticks to the foil. Also the Cayenne Pepper is good but quite spicy depending on how liberally you put it on. The Paprika has a great flavor, we also thought that Lemon Pepper would give it a great flavor (something we’ll try next time).
We all enjoyed it except Madison who says she’d like it better without the veggies.
