Awesome! Cupcake Carrier…

Melinda loaned this cupcake carrier to me and it’s awesome. I used Sherry’s sisters recipe for Zucchini Chocolate Cake. I’m excited to try them out tomorrow.

1 1/2 cup granulated sugar
3/4 cup brown sugar
1/2 cup oil
2 eggs
4-5 cups shredded zuchinni
3/4 cup cocoa powder
2 cups all-purpose flour
1 tsp soda
1 tsp salt
2 tsp vanilla
In a small bowl, combine dry ingredients.  In a mixer, blend sugars, oil and eggs until creamed. Add zuchinni.  Then slowly add dry ingredients. Mix vanilla in last. Pour into greased 9X13 pan and bake 350 degrees for about 30 minutes.

For cupcakes I cooked them 20 – 25 minutes.

Frost with your favorite chocolate frosting and enjoy this super moist cake!
